A Sunny Day

Wow!  What a difference the sun makes this year!

I hope all of you are enjoying the produce.  We have been.  One item I would encourage you to try if you haven’t yet this year is the blue curly kale.  It has been incredible this spring!  My kids are eating it in salad, and I wanted to offer this recipe that we (the adults) have enjoyed.

A side note:  I found this recipe in Come to the Table:  The Slow Food Way of Living edited by Karen Heron published in 2008.  I highly recommend this book for its wonderful photography, doable recipes and thoughtful discussion of organic agriculture.

Kale Ceviche

4 stalks kale, I use more with the younger leaves, remove stems and chop leaves into medium shreds

2 scallions, roots removed and the white sections chopped

4 small radishes, thinly sliced and quartered

2 carrots, peeled and thinly sliced

Juice of 1 lemon

1 T. olive oil

Soy sauce to taste

Freshly ground pepper

Mix together all the ingredients and serve.  You can use any colorful combination of vegetables in addition to or instead of kale, including baby beets, spinach or pac choi.  This salad gets more delicious if left to marinate for 10 to 15 minutes.  Enjoy!

Thank heavens the weather forecast is looking a bit brighter for this week!

We are so excited about the garden – everything is looking good!  Some of you have been asking about beets and sugar snap peas… they are both looking great.

We wanted to extend this invitation to let each of you know that you are welcome to visit His Glories Farm on Saturday, May 30 from 8 to noon.  This is the first of four “Open Patch” dates that we will host this summer.

Vanessa and the crew will be available for tours as well as purchasing daylilies, hostas, other perennials and vegetables which we will dig or pick fresh for you that morning.

Happy Mother’s Day

“Thank you” to Moms!!

We have been so blessed to have a nurturing, loving and forgiving Mom.  Big shoes to fill…

And to share a smile with all of you, enjoy this quote on housework by one of my favorite Moms ever, Erma Bombeck:

“My theory on housework is, if the item doesn’t multiply, smell, catch fire, or block the refrigerator door, let it be. No one else cares. Why should you?

Spinach Salad Recipe

Isn’t it wonderful to see the sunshine again?  Rain is always welcome, but we are grateful when it is balanced with some sunshine too.

If you are looking for something different to make this week, we have a suggestion.  Try Spinach Salad.  (This recipe comes from the Trinity Lutheran Church, Stewardson, Illinois cookbook.  And judging from the stains on page 21, I refer to it often).

Spinach Salad by Jan Benner

1 lb. fresh spinach

2 tomatoes

6-8 green onions

8-10 fresh mushrooms

6-8 slices bacon, cooked, drained and crumbled

Dressing:

1/4 c. wine vinegar

1/2 c. sugar

1 t. salt

1 T. Worcestershire sauce

1/3 c. ketchup

1/4 c. vegetable oil

Mix vinegar, sugar, salt, Worcestershire sauce; add ketchup and oil.  Mix together well.  Refrigerate.

Wash and drain spinach, tomatoes, mushrooms and onions.  Tear or cut spinach into salad size pieces; dice tomatoes and onions; slice mushrooms.  Refrigerate to keep vegetables crisp.

When ready to serve – add vegetables and crumbled bacon to spinach; shake dressing to mix; pour over spinach and toss lightly.
